The main reason for the rise in prices was inflation, expensive borrowed money and the outflow of cheap labor.

Since the beginning of summer, the average bill for the most popular dishes in catering establishments has increased from 9 to 11% compared to the same period last year. The list of products for which prices were measured included soup, main course with side dishes and salad. On average, Russians spent 318 rubles per serving on soups this summer; the price of this dish increased by 11%. A salad in catering establishments in June-July cost an average of 295 rubles (+10%), and a serving of hot food with a side dish cost 337 rubles (+9%).
At the same time, sales of soups and salads, according to the Check Index, in physical terms (number of servings) increased by 12% each, hot with side dishes – by 15%.
The dynamics of price growth for ready-made meals over the past 12 months was confirmed by participants in the public catering market. In particular, prices increased by 10% in June – July 2024 compared to the same period last year in the Teremok Russian cuisine restaurant chains, as well as in Yakitoria. The cost of dishes has also increased in the Rostic's chain, a company representative said, but did not specify how much the items on the menu have increased in price.
Due to the rising cost of products, TanukiFamily (food delivery from the Tanuki, Tvoya Pizza and Ruff restaurants) has excluded items with expensive imported ingredients from the menu. The company also began purchasing a number of products, including rice and salmon, from domestic suppliers, which allowed TanukiFamily to reduce prices by 8–12%.
The founder and manager of the Teremok chain, Mikhail Goncharov, said that the company adjusts prices every three months due to changes in the cost of products. According to him, to do this, the company is looking for cheaper ingredients that satisfy its quality, and also requires a clear justification for price increases from suppliers. If it is not possible to find an alternative and there is a threat of supply disruption, only then does the network increase prices.
“There are problems with the harvest in Russia due to frosts on a number of crops, including potatoes. Rents are growing due to an increase in interest rates, and a shortage of personnel amid the outflow of migrants leads to the need to increase salaries,” said Mikhail Burmistrov , general director of Infoline Analytics .
In the second half of the year, pressure on the margins of the restaurant business will most likely continue, so prices will continue to rise, Burmistrov believes. At the same time, buyers, according to him, are reacting to higher prices in public catering by reorienting themselves to purchasing ready-made food in retail chains.
