The leading sales positions are occupied by syrniki, casseroles and porridges, as well as lunch dishes (pasta, wok). Their sales make up 5.3% of the total turnover and are found in every 25th check. The best-selling categories of prepared food were salads (28%), main courses (25%), snacks (12%), sushi (10%) and breakfasts (7%).

Alexander Nigmatullin, Director of Sales Development for Ready-to-Eat Meals at the Perekrestok chain, shared data on the category's development in stores and online delivery during a press tour of the X5 Food factory kitchen. The production facility supplies 530 Perekrestok stores and 5,000 Pyaterochka stores located in the Central Region, and ships up to 230,000 units of merchandise per day.

Currently, the Perekrestok ready-to-eat food assortment includes over 90 items, including dishes from national cuisines of the world, the Select line, and food for healthy eating. In the first half of 2024, sales of ready-to-eat food increased by 31%. The Pyaterochka retail chain offers from 80 to 120 items of ready-to-eat food, and sales growth this year amounted to 75%.

The X5 Food factory kitchen is located in the city of Dolgoprudny. It has its own physical, chemical and microbiological laboratories, which allow for daily quality control of raw materials, semi-finished products and finished goods. Thanks to a high-tech control system, each stage of production, from the materials used in the cooking process to shipment, undergoes a thorough check. In addition, the factory has a certification scheme for the food safety management system in the food supply chain (FSSC 22 000), which also in turn requires strict control over compliance with sanitary and hygienic standards.

"In the first half of the year, sales volumes of prepared food in X5 Group retail chains grew by almost 60%. The growth in demand for prepared food is associated with the acceleration of the pace of life, the unwillingness to spend time on cooking while wanting to maintain a varied diet. This market will grow in the next five years. Taking this trend into account, we are working on our own efficiency and increasing capacity. We recently completed a deal to purchase the Hot Hit factory in St. Petersburg and are increasing production, and by mid-2025 we plan to increase the capacity of the factory kitchen in Dolgoprudny by 50%," said Olga Feldt, Managing Director of X5 Food.
