In the first seven months of this year, 20 new food halls were opened in the country, with a total area of 21 thousand square meters. Of these, six opened in Moscow, three in St. Petersburg, and 11 in the regions. By the end of the year, another 18 new projects are expected to be launched, making 2024 a potential record year for the number of openings in this segment.
The food hall format was formed in Russia in its modern sense in 2014 with the opening of the first project in Moscow. Over 10 years, the number of gastronomic facilities has exceeded 100, and, according to NF Group, as of early August 2024, Russia has as many food halls as the whole of Europe. The main trends in the creation of gastronomic spaces in Russia are a variety of cuisines and dishes, high quality food, support for local and gastronomic concepts, as well as the development of food halls as places for relaxation and live communication – they correspond to European practice.
However, the number of planned and built food halls in Russia significantly exceeds European indicators, which is due to the initial stage of development of this market, especially in the regions. In the medium term, the Russian market may overtake Europe in the number of such facilities.
