German technology allows you to determine with certainty whether an egg actually comes from an organic farm, because it clearly indicates the conditions in which the laying hen is bred, reports Agrarheute. The new method uses artificial intelligence.
The innovative technology was developed by a team of scientists from the German Institute of Food Technology (DIL) in Quakenbrück. Using nuclear magnetic resonance spectroscopy (NMR spectroscopy), the spectrum of egg yolk is measured and analyzed. This spectrum is like a fingerprint and contains a lot of information.
Using artificial intelligence (AI), researchers managed to identify characteristic patterns for each form of chicken farming. Eggs can be assigned to four farm types with an accuracy of 97.1%. However, it is possible to indicate with 99.9% accuracy whether the egg comes from a conventional or organic farm. The researchers examined approximately 4,500 egg samples to confirm their findings. The new method can be easily used to monitor food quality.
