In 2024 year Ukrainian restaurateurs continued to adapt to the generator economy, trying to keep prices and their own motivation. The major problem remained an acute deficit of staff. The word that is most frequently voiced in the market is collaboration.

Data on revenue, average check and attendance of establishments are based on aggregated non-personalized statistics of data sales Poster. The sample is over 7000 establishments of all types of businesses operating for 2023-24 years.

How the indicators changed by cities

The revenue of the establishments of public Ukraine in 2024 year increased by 10% compared with 2023 year, Average check – by 17% as a result of increasing prices. While attendance dropped by 3%, the causes of the fall are economic uncertainty and increased mobilization.

“The year has been uniform. The first semester of 2024 was more successful, than the second year to year. So, for example, in the second semester of 2024 year the attendance of institutions fell by 7% compared with the second semester of 2023 year. But because of that the beginning of the year has been not bad, we have a total drop of only 3%.” – noted CEO CEO and co-founder Poster Rodion Yeroshek.

Of the biggest cities in Ukraine the badest annual dynamics of visitation showed Dnipro. There the attendance of establishments dropped by 5% in 2024 year compared with 2023. Better, than in the previous year, the situation was in Kharkov – growth by 2%, Lviv and Odessa – growth by 1%. Negative dynamics felt in in establishments Kiev and Vinnitsa – minus 3%.

Revenues and average check increased in the establishments of the biggest cities because of increasing prices.

How the indicators changed by business

The attendance of almost all types of businesses decreased in 2024 in compared with 2023. The most decreased indicators at pizzerias, fast-food and restaurants – by 8% and 7% respectively. Positive dynamics showed sushi – growth by 1%, and attendance institutions where sell coffee with self, remained unchanged.

Revenues and average check increased in all segments of establishments as a result of increased prices.

    • Revenues of establishments specializing in sushi, increased more than all segments by 16%, average check – by 10% from 557 rn to 613 rn
    • Revenues of cafes increased by 14% to the indicators of the last year, average check – by 15% from 83 grn to 95 grn
    • The coffee with self segment showed growth by 13% in revenue, Average check increased by 15% from 68UAH to 79 grn
    • Revenues of bakeries increased by 11%, average check – by 12% from 67 grn to 75 grn
    • Cafes showed growth in 9%, while the average check increased by 16% from 239 grn. to 276 grn
    • Revenue of restaurants increased by 8%, average check – by 18% from 518 grn to 610 grn
    • Pizzerias, bars and fast food increased revenue by 4%, while the average check of pizzerias increased by 12% from 261 grn to 293 grn, bars by 13% from 369 grn to 418 grn, fast-food – up 13% from 155 grn to 175 grn

    Main calls, profitability and team

    The data in this section is based on anonymous anonymous questionnaire survey of restaurateurs across Ukraine. The survey was conducted in the restaurant media “Reve ta stogne restaurateur” in December 2024 year. Total form filled about 300 respondents. The vast majority are from Kiev and large regional centers. Among the types of business are restaurants, cafes and coffee shops.

    Expectations vs reality

54% of restaurateurs surveyed noted that the performance of establishments in 2024 year is lower than expected. In a survey in the last year there were 43% of such respondents. Meanwhile, 11% of the surveyed considered that the indicators even exceeded expectations.

The hardest thing for restaurateurs in 2024 year was hiring and retaining teams and working when the lights went out. In addition, entrepreneurs were concerned about the mobilization of staff, the own motivation to work and the inspections of the business.

Almost half of therestaurateurs (47%) faced a decrease in profitability of business in 2024 year.

20% of the restaurateurs surveyed had an average margin of business 10-15%, and 21% had no profit in 2024 year.

Foodcost and prices

34% of restaurateurs surveyed reported that they work with foodcost 30-35%. Only a quarter had foodcost to 30%.

45% of entrepreneurs reported an increase in prices for products in average by 10-20%.

Most establishments changed prices for dishes in the 2024 year by more than 10%.

Delivery

34% of restaurateurs said that the number of orders for delivery has increased in 2024 year while almost as many of those surveyed (31%) didn’t notice an increase in orders.

Team

39% of restaurateurs were able to keep the team in 2024 year in the same number, and 28% even attracted new employees.

Most restaurateurs spent on wages to pay the team in 2024 year 20-30% of revenues. With this 12% of the surveyed spent more 40% of the revenue of the establishment.
