In total, 147 tons of all kinds of caviar were eaten throughout the country in the first half of 2024. The leaders in consumption were residents of the capital and central regions – they accounted for almost a fifth of all caviar delivered in orders from stores, in the Volga region – 13%, and in the North-West – 9%. They also love caviar in the south: 7% of caviar was eaten in Rostov-on-Don, Krasnodar and Volgograd.
The most popular, due to the ratio of price and taste, was the delicious capelin and herring caviar with smoked salmon sauce: almost 43 tons of it were eaten over the past six months. It topped the top taste preferences in most Russian cities, except Khabarovsk and Vladivostok, where the same caviar, only with shrimp sauce, is more in demand. A total of 21 tons of this version of the fish delicacy were purchased, and it ended up in second place in the Russian caviar rating. In third place is imitation salmon caviar: 16 tons of this product were eaten throughout the country during the study period.
Traditional salmon caviar was in fourth place in the top list – Russians obviously treat themselves to this delicacy on special occasions. Closing the top is capelin caviar in a sauce with a smoky aroma: almost 10 tons of it were purchased.
